Braised cabbage

Cabbage is from the cruciferous vegetable category. It is extremely versatile and can be served hot or cold in numerous dishes. It is also colorful, carrying a variety of nutrients depending on whether it is green or purple.   

Cabbage is low in calories, high in fiber and can help reduce inflammation and protect against various health conditions.

Braised Cabbage 

 

Ingredients: 

  • 2 teaspoons olive oil 
  • 2 yellow onions, cut in half, thinly sliced 
  • 1 head green cabbage, halved, cored and thinly sliced 
  • 2/3 cup vegetable or chicken broth 
  • 2 teaspoons honey 
  • 2 teaspoons caraway seeds 
  • 3 tablespoons apple cider vinegar 
  • ½ teaspoon each salt and pepper, or to taste 

 

Directions: 

  1. In a large pan with deep sides, heat oil over medium.  Add onions and cook until just turning golden brown, about 6-8 minutes. 
  1. Add cabbage and cook until cabbage wilts, stirring frequently, for about 10 minutes. 
  1. Add broth, honey, caraway seeds and bring to a simmer.  Reduce heat to low and cover until cabbage is tender, about 15 minutes. 
  1. Stir in vinegar, salt and pepper.  Heat to medium and cook for an additional 5 minutes or until liquid is evaporated.
