Braised Cabbage
Ingredients:
- 2 teaspoons olive oil
- 2 yellow onions, cut in half, thinly sliced
- 1 head green cabbage, halved, cored and thinly sliced
- 2/3 cup vegetable or chicken broth
- 2 teaspoons honey
- 2 teaspoons caraway seeds
- 3 tablespoons apple cider vinegar
- ½ teaspoon each salt and pepper, or to taste
Directions:
- In a large pan with deep sides, heat oil over medium. Add onions and cook until just turning golden brown, about 6-8 minutes.
- Add cabbage and cook until cabbage wilts, stirring frequently, for about 10 minutes.
- Add broth, honey, caraway seeds and bring to a simmer. Reduce heat to low and cover until cabbage is tender, about 15 minutes.
- Stir in vinegar, salt and pepper. Heat to medium and cook for an additional 5 minutes or until liquid is evaporated.
