Refreshing mango salsa

Entice your taste buds with a different salsa flavor and ingredients. Mangoes, when ripened, are a sweet treat filled with Vitamin A and C, potassium, and fiber.  

Mixed with the other ingredients, this salsa provides a filling and nutritious dip, perfect for summer! 

Ingredients: 

  • 1 large ripe mango, peeled and diced 
  • 1 large tomato (or 3 small plum tomatoes), diced 
  • 1 small cucumber, diced 
  • ½ red onion, diced 
  • 1 jalapeno pepper, deseeded and diced 
  • 2 cloves garlic, minced 
  • Juice of 1 lime 
  • 2-4 tablespoons of fresh cilantro, finely chopped 
  • ½ teaspoon salt 
  • Optional ingredients:  ¼ teaspoon cumin and/or cayenne pepper, or an additional hot pepper for an extra kick 

Directions: 

  1. Combine the diced mango, tomato, cucumber, red onion, jalapeno, and garlic.
  2. Pour the lime juice over the ingredients, stir to coat.
  3. Add the cilantro, salt, any optional ingredients if using, and stir to combine.
  4. Refrigerate for 10 minutes.
  5. Adjust seasonings to taste and enjoy!
