Entice your taste buds with a different salsa flavor and ingredients. Mangoes, when ripened, are a sweet treat filled with Vitamin A and C, potassium, and fiber.
Mixed with the other ingredients, this salsa provides a filling and nutritious dip, perfect for summer!
Ingredients:
- 1 large ripe mango, peeled and diced
- 1 large tomato (or 3 small plum tomatoes), diced
- 1 small cucumber, diced
- ½ red onion, diced
- 1 jalapeno pepper, deseeded and diced
- 2 cloves garlic, minced
- Juice of 1 lime
- 2-4 tablespoons of fresh cilantro, finely chopped
- ½ teaspoon salt
- Optional ingredients: ¼ teaspoon cumin and/or cayenne pepper, or an additional hot pepper for an extra kick
Directions:
- Combine the diced mango, tomato, cucumber, red onion, jalapeno, and garlic.
- Pour the lime juice over the ingredients, stir to coat.
- Add the cilantro, salt, any optional ingredients if using, and stir to combine.
- Refrigerate for 10 minutes.
- Adjust seasonings to taste and enjoy!
